1 can coconut cream

1 1/2 tsp gelatin

2 scoops unflavoured, or vanilla Younger Secrets Age-Defying Collagen Intensive

3 tablespoons honey or maple syrup

Zest of 2 lemons

Bring 1 cup of the coconut cream and lemon zest to almost a boil. Leave to infuse. Pour the remaining coconut cream into a bowl and sprinkle with the gelatin allow to bloom for 10 minutes. Add to the heated cream, whisk and gently heat until the gelatin is dissolved. Whisk in sweetener. Pour into small dishes and refrigerate until set. Unmould and decorate with more lemon zest ..enjoy.
